Norwegian food with Madam Charlotte W. Homme and chef Kelana

Last updated: 07/05/2010 // The Norwegian Ambassador's wife, Charlotte Wu Homme, made Norwegian food together with Indonesian five star chef Teuku Kelana at the residence on May 6.

The session was set up for the popular TV show ”Menu and Venue” on MetroTV. The program will be aired later in May. We have attached recipes if you want to make your own traditional Norwegian food.

 

 

Juicy Salmon Burgers

4 servings

 

600 g boneless, skinnless salmon fillet

100 g smoked salmon

1 tablespoon potato starch

1 egg

½ teaspoon salt

½ teaspoon ground pepper

2 teaspoons minced fresh thyme or basil

3 ½ tablespoon sliced scallions

Butter

 

Cut fresh and smoked salmon into chunks. Place in a food processor with starch, egg, salt and pepper. Process until smooth. Stir in remaining ingredients. Let rest for a while in the refrigerator. Form into flat patties and fry in butter over medium heat until golden and cooked through. Serve on a bun with lettuce and dressing or with boiled potatoes and vegetables.

 

Almond Ring Cake

18 rings

 

500 g finely sliced ground almonds

500 g confectioner’s sugar

4 egg whites

 

Icing

½ egg white

75 g confectioner’s sugar

½ teaspoon lemon juice

 

Combine the almonds and sugar. Add egg whites to form a stiff dough. Pack in plastic wrap and let rest over night. Preheat the oven to 200 degrees C. Roll into finger-thick lengths, or use a cookie press with wide round tip. Arrange in greased cake rings (can be purchased in specialty store), making sure that the ends, where joined, are as smooth as possible. Place the rings in oven sheets and bake for around 10 minutes. Cool completely before tapping out of rings. Make a small cone of paper and cut of tip. Combine ingredients in the icing and spoon into the cone. Pipe zigzags of frosting into each ring and stack immediately. Almond cake rings freeze well.
